Private dining at Lumière Lodge is shaped by season, conversation, and an abiding respect for place.
Offered as a considered extension of the home, these gatherings are hosted on a limited basis for guests staying at the lodge. In collaboration with a small number of chefs whose work is deeply connected to Tasmania, each experience is curated with care and restraint, allowing the character of the house - and the rhythm of the occasion - to remain at the forefront.
All dining experiences take place within the intimacy of Lumière Lodge and are available by enquiry.

Analiese Gregory
Analiese Gregory’s cooking is shaped by a life lived between places - and ultimately grounded in Tasmania. After years working in some of the world’s most respected kitchens, Analiese returned to the island, where the landscape, seasons, and wild abundance profoundly reshaped her relationship with food.
Her cooking today is guided by intuition and availability: foraged ingredients, thoughtfully sourced produce, and techniques that allow flavour and place to remain at the forefront. It is expressive yet restrained, informed by precision but never dominated by it.
At Lumière Lodge, Analiese offers private dining experiences that feel deeply personal and domestic - menus shaped by the moment, prepared with care, and served quietly within the rhythm of the home. These evenings reflect her love of cooking for people in intimate settings, where conversation, food, and atmosphere are given equal space.
Analiese is the host of the SBS series A Girl’s Guide to Hunting, Fishing and Wild Cooking, and the author of How the Wild Things Are. Both reflect her evolving connection to land, seasonality, and a way of cooking shaped by curiosity, restraint, and life in Tasmania.

Lilly trewartha
Lilly Trewartha is an accomplished chef with over 15 years' experience in kitchens across Tasmania, London and beyond.
Raised in Southern Tasmania - a region renowned for its exceptional produce - Lilly developed a deep respect for seasonal ingredients and the people who grow them. This connection to place continues to define her cooking - produce led, thoughtful and personal.
Her career includes time in some of Tasmania's most respected kitchens, where she refined a style that balances technique with warmth and creativity. In 2020, Lilly co-founded the six-month pop-up Izakaya Temporary, inspired by her travels through Japan. The project marked a defining chapter in her career and has since evolved, with Lilly presenting her distinctive interpretation of Japanese izakaya flavours paired with Tasmanian produce at venues and events across Tasmania and interstate.
Today, Lilly brings this approach into private homes and curated events around Australia. Her menus are always guided by what is in season, influenced by Japanese cuisine and her global travels, and designed to feel generous, personal and grounded in place. At the heart of every experience is a simple intention: to create beautiful food that brings people together.
Whether the evening unfolds as a refined multi-course progression or a composition of distinctive dishes presented thoughtfully throughout the meal, the experience is generous without excess and quietly elegant in its pacing.
The Experience
Private dining at Lumière Lodge is unhurried and intimate, shaped by the character of the home itself. Evenings unfold at a natural pace, allowing guests to settle in, converse, and enjoy the quiet luxury of being cared for within a private residence. These experiences are not intended to replicate restaurant dining, but to offer something more personal - a shared table, a considered menu, and the rare pleasure of time given generously.
Enquiries & Availability
The Lumière chef experience is designed exclusively for intimate gatherings of two to six guests, preserving the serenity and character of the home for a truly personal occasion. This offering is available only to those staying at Lumière Lodge, with all bookings subject to availability.
All private dining experiences include a Curation & Preparation Fee of $250. This allows us to thoughtfully prepare the home for your gathering - including table linen, candlelight, seasonal florals, and the careful styling and additional cleaning required to host within a heritage residence.
